Olive Oils from Fruits Infected with Different Anthracnose Pathogens Show Sensory Defects Earlier Than Chemical Degradation

Anthracnose is the most important disease of olives responsible for olive oil depreciation. The aim this study to compare negative effects common anthracnose pathogens in Portugal, Colletotrichum nymphaeae, C. godetiae, or acutatum, on extracted from fruits cultivated Portuguese cultivars, ‘Galega Vulgar’ and ‘Cobrançosa’. Healthy (ripening index 3.5) were inoculated, incubated, sampled over 14 days post-inoculation (d.p.i.) symptom assessment extraction. Virgin (VOO) was characterised by quality criteria parameters (acidity, peroxide value, UV absorbances, organoleptic assessment, fatty acid ethyl esters (FAEE)), total phenols (TPH), main acids, waxes compositions. Galega Vulgar more susceptible than Cobrançosa fruits. nymphaeae equally highly virulent both while godetiae less especially Cobrançosa. VOO acidity increased reached 5% oils 2% infected with acutatum at d.p.i. FAEE higher legal limit extra 7 11 godetiae. TPH decreased through experiments all inoculated fungi. musty sensory defect detected 3 earlier chemical degradation, respectively. degradation levels depended species cultivar.
